A simple new summer salad is right around the corner!  Try this Dietitian Nutritionist approved recipe featuring shrimp, avocado, zesty lime & cilantro.

Zesty Lime Shrimp and Avocado Salad

Ingredients

  • 1 lb. Jumbo cooked Shrimp
  • 1 Medium Tomato
  • 1 Avocado, diced
  • 1 Jalapeno, seeded and finely diced
  • 1/4 cup chopped red onion
  • 2 limes, juiced
  • 1 tsp. olive oil
  • 1 tbsp. chopped cilantro
  • salt and pepper to taste

Directions

  1. In a small bowl, combine red onion, lime juice, olive oil, pinch of salt and pepper. Let marinate at least 5 minutes to mellow the onion flavor.
  2. Peel, deveined and chop cooked shrimp.
  3. In a large bowl add remaining ingredients, add in onion/lime mixture toss lightly. Add additional salt and pepper to taste.
