Treat Yourself Tuesday
As Labor Day has just passed, many of us are still in the party and end of summer mood. This is a great side dish to accompany any meal. It makes a lot and is super quick and easy. This is sure to be a hit at a party or just to spice up a mundane weeknight dinner.
What you’ll Need:
1 LB of Pasta (I used bowtie pasta)
1 Yellow or Orange Bell Pepper
1 Medium Size Red Onion
1 Block Pepper Jack Cheese
1 Block Colby Cheese
1 Pack Grape Tomatoes
Balsamic Dressing
1 Teaspoon Salt
1 Table Spoon Olive Oil
Bring a large pot of water to a boil, add salt and olive oil to boiling water. Once water is boiling, add pasta and cook until tender.
While you’re waiting for the pasta to cook start chopping your veggies. Cut your pepper and onion into bite size pieces. I used a hand chopper for both – made life so much easier and far less onion tears. Slice your grape tomatoes in halves. Cut your cheese blocks into cubes. Feel free to use any 2 blocks of cheese you like if Pepper Jack and Colby aren’t to your liking.
Once your pasta is done, remove from heat and place in a strainer. Run cold water over your pasta to remove any excess starch and to help cool them down. Make sure your pasta is completely drained. Combine all your veggies with your pasta and mix. Add your desired amount of your favorite balsamic dressing or until all the veggies and past are evenly coated. Salt and pepper to taste then serve.
