Treat Yourself Tuesdays:

Calling all lazy cooks out there, this recipe is for you. The only thing easier is cereal in my opinion, and this tastes a lot better. Zucchini is in perfect season right now it’s at farmers markets, road side stands and supermarkets galore. Be sure to snatch up a good one for this super easy side dish.

 

Sautéed Zucchini Medallions

Prep Time: 10 min, Refrigerate Time: 30-60, Cook Time: 20 min

What you’ll need:

1 Medium – Large Zucchini

1 Cup Balsamic Salad Dressing

1 Gallon Zip Lock Bag

Chop Zucchini into quarter inch pieces and place into gallon zip lock bag.

Add 1 cup of Balsamic Salad Dressing of your choice.

Let sit in the refrigerator for 30-60 minutes depending on taste.

In large frying pan place zucchini mixture over medium heat. Stir and flip until golden brown on both sides.

Enjoy this as a side dish with chicken and a baked sweet potato.
