Eat with the Seasons: Spring Recipe Roundup

What is Seasonal Eating?

Seasonal eating, also known as "eating the seasons", involves eating foods that are in season for your geographic area. This means eating fruits and vegetables that are mostly ripe and ready to harvest at a certain time of year.  For example, you might eat asparagus in the spring, tomatoes in the summer and apples in the fall.

Benefits of eating seasonally:

Eating local in-season produce has a variety of benefits including, health benefits, community benefits, and environmental benefits.  Additionally, eating locally can be a budget-friendly option, as local produce often costs less than items shipped long distances, and farmers markets can offer competitive prices.
