Grilled Chicken with Savory Summer Vegetables
Ingredients:
- 4 small boneless chicken breast (about 1lb)
- 1/4 cup Sun-Dried Tomato vinaigrette dressing divided
- 1 zucchini, cut into 2 inch pieces
- 1 cup cut asparagus spears
- 1 red onion, cut into 2 inch chunks
Directions:
- Heat grill to med-high, brush chicken with 2 tbsp. dressing. Let stand for 10 minutes
- poke hole in aluminum foil pan and toss vegetables with remaining dressing and add to prepared pan. Place chicken on grill next to pan with vegetables. Grill about 20 minutes or until chicken becomes 165 degrees. The veggies will be crisp tender.
